Yummy Breakfast Sammie

If your a lameo like myself and your on WW (secret code for Weight Watchers) you have to try my low point HIGH IN FIBER & PROTEIN sammie...

***ONLY 2.5 POINTS***

- 1/2 100 Calorie English Muffin
- 1 Babybel Swiss Cheese Triangle
- 1 Egg White
- Pinch of EVOO (extra virgin olive oil)
- Pinch of Sea Salt
- Pinch of Pepper
- 3/4 of steamed spinach
- 1/2 of a sliced Roma Tomato


Poach your egg. If you don't know how to do it then boil 3 cups of water with 3 tblspns of white vinegar ( I like to use rice vinegar), when teh water starts boiling add your egg white SLOWLY into water. KEY WORD IS SLOWLY PEOPLE!!! Let it cook for appox. 5-8 min. Just put your spoon in the water and see if its cooked. Toast your 1/2 a muffin and spread cheese on it. Put your spinach in a container with the lid loosely on, place in the microwave for 30 secs. DON'T ADD WATER while steaming! Last slice your tomato...

Now start your layers:

muffin, cheese, spinach, tomato, pinch of EVOO, egg white, pinch of salt and pepper.
